I made these for breakfast today.
1 cup quick oats
1 cup plain whey protein powder
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
3 teaspoons xylitol
1 cup (240g) sour cream
3 drops liquid stevia
1/2 cup (120g) melted butter
1/8 cup (30 ml) cream
3 eggs
1 teaspoon vanilla
10.5 ounces (300g) diced peaches (fresh, canned, whatever)
Combine all dry ingredients in a small bowl. Combine sour cream, stevia, butter, cream, eggs, and vanilla in a larger bowl. Mix peaches in with the dry ingredients until everything’s wet, then mix into the wet ingredients. Pour into paper-lined muffin tins. Bake for 20-25 minutes at 180C.
The original recipe says 12 large muffins. It’s not kidding – mine overflowed into each other. So next time I’d make it into 18 smaller muffins so they stay separate.
Oh, and I see no reason why you couldn’t substitute some other fruit instead of the peaches if they’re not your thing.
